Throw a frozen Boca burger into the microwave to cook- 1 minute. While it was cooking, I heated a Mission Heart Healthy flour tortilla (1.5g of fat!) on the stovetop and rinsed/ sliced some green leaf lettuce and tomato. I topped the warm tortilla with the green leaf lettuce, Boca burger (cut into half so I can roll it like a burrito), tomato slices and drizzled some chili sauce on top for flavor.
*I got this from another website and at work you can just eat the tortilla cold or nuke it for 1 minute.

Night before last, I made corned beef in the crockpot with carrots and potatoes, and last night rabbit cut it up and put it into 4 containers for lunches - two days worth for me, and sandwiches and veggies for her.
I love this - and I love corned beef.
What other foods work well like this - with quick prep times in the crockpot?
I can get sick of having the same thing all the time.

One of those plastic ready-to-microwave bowls of Chunky Soup. Beef Stew, I think.
Quite tasty - should have done more of these over the winter, I think. It's not the same when it's 70 degrees out!
The sodium content is downright frightening though.
Yesterday, I did Mexican food for lunch.
How many days a week do you go out to lunch?

Sandwiches for lunch
I like to bring sandwiches for lunch, but have several issues with doing so:
- they're often icky by lunchtime, if they aren't refrigerated
- if packed ahead of time and stored in the fridge, they can be icky
(usually one or the other, not both)
- meat and bread go bad in my house as my kids don't pack lunches, and rabbit doesn't often do sandwiches for lunch
- my preferred sandwich is tuna salad - which actually does qualify for *both* of the refrigeration issues
- I run out of ideas for yummy sandwiches, to the point that PB&J starts to look good.
Anybody else bring sandwiches? What kind?
Note: I do have a fridge at work that I have access to, but it stinks so badly that some days I won't put food in it.
WW Chicken Tortilla Soup
WW Chicken Tortilla Soup
10 oz. Chunk White Chicken (drained)
14 oz. Fat-Free Chicken Broth (I use the 16oz box)
16 oz. Fat-Free Refried Beans
15 oz. Black Beans (drained and rinsed)
15-1/4 oz. Fiesta Corn (Corn w/ Red & Green Peppers) (I use regular corn sometimes)
1 cup + Chunky Salsa (I use HOT) and I add mild green chiles and jalapeno slices
Hot Sauce to taste
Mix all ingredients together, bring to a boil, simmer 10 minutes.
Optionally top with light cheese, light sour cream or low-fat tortilla chips
3pt for an 8oz cup (toppings additional)
This is a standard lunch for me, but I'm getting a bit sick of it:
2 10oz cans of canned chicken (you can certainly use fresh chicken, too, if you have the time)
4T light miracle whip (I don't like mayo, but you can substitute)
1/4 cup craisins or raisins
1/4 cup nuts
1/2 - 1t. curry (more to taste)
Mix well, serves 4.
I eat w/o bread, but occasionally with crackers.
I've seen apples added instead of raisins.
